The perfect recipe to accompany our Apple & Walnut Chutney


I love bubble and squeak! One it tastes amazing and two it reminds me of my mum making it with Christmas dinner leftovers, the best kind of nostalgia.

Typically bubble and squeak is a leftover dish but I often make it fresh and it really is just as good.  Super simple it’s a bit of a compost dish, that is you can throw in whatever you have in the cupboards and it always turns out great.

Top it off with some of our delicious apple and walnut chutney and you’ve got yourself a winning dish.

Here is my favourite recipe:

Ingredients

  • 250g brussel sprouts
  • 250g potatoes
  • 1 onion 
  • 3-4 florets broccoli 
  • 100g bacon (leave out if you prefer a veggie dish)
  • 180g whole chesnuts
  • 50g dried cranberries
  • Knob of butter
  • salt and pepper to season

Method

  • Cut the potatoes into small cubes and put in a pan boiling water for 10 minutes to soften.
  • Chop up the rest of the veg, I prefer to blitz the sprouts in a food processor so that they are nice and fine.
  • add a knob of butter to a large frying pan 
  • drain the potatoes and add everything to the frying pan at the same time.
  • cook for around 20 minutes, turning regularly but not soften that it looses the heat.
  • serve with a spoon of our Apple and Walnut chutney

eh voila,  its that easy.
